Done in just 15 minutes, this quick and easy Shrimp and Zucchini Noodles recipe is so tasty you won't even miss the pasta! It is perfect for a super delicious weeknight dinner. This healthy dinner is made in one pot!


INGREDIENTS


  • 1.5 lb 25-30 raw shrimp, peeled and deveined

  • 5 medium zucchini (stems trimmed and spiralized into noodles).

  • 2 tbsp olive oil

  • 4 garlic cloves, finely chopped

  • 1/4 cup butter

  • 1 lemon, juice and zest

  • 1/4 cup chopped parsley

  • pinch of red pepper flakes

  • salt and pepper, to taste.




Instructions


  • Heat the butter in a large skillet over medium-low heat. Add the garlic and cook until beginning to soften, about 30 seconds minutes.

  • Add the shrimp in one flat layer and sprinkle with salt and pepper. Cook for one minute, stir the shrimp for another minute or two to cook the other side. Use a large spoon and remove the shrimp to a plate.

  • Add the rest of the butter, chopped onions and sauté until soft.

  • Add the zucchini pasta and toss for 30 seconds to warm it up. Add the lemon juice, and parsley. Add the shrimp back to the pan and stir for another minute. (Do not overcook or the zucchini noodles will become mushy.) Serve immediately.
