This lightly sweet and golden brown french toast is topped with the most caramelized brown sugar banana topping. It’s easy to make and perfect weekend brunch!
Ingredients for caramelized bananas:
4 ripe bananas sliced
2 tablespoons butter unsalted butter
1/3 cup brown sugar
INGREDIENTS for french toast
8 slices toast
3 large eggs
3/4 cup milk
1 tablespoon granulated sugar
1 1/2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
Butter for pan
Melt butter in a small pan on medium heat. add the bananas and brown sugar.
Stir to coat the bananas in the brown sugar and butter. The brown sugar should melt almost immediately.
Keep stirring for 2-3 minutes until the caramel sauce thickens. Remove from the heat as soon as it thickens.
Preheat a non-stick pan or over medium-low heat.
In a bowl whisk eggs, milk, sugar, vanilla and cinnamon; whisk well to combine.
Lightly grease pan. Quickly, dip one slice of toast into the egg batter, allow to soak for 2-3 seconds, flip and dip the other side, soaking again for another 2-3 seconds.
Fry until golden browned on underside for 2-3 mins then flip and cook until golden browned. Repeat with remaining bread slices. Top caramelized bananas over French toast. Serve immediately.
