This easy chicken fajitas is on the table in 20 minutes or less, perfect for busy nights!
4 boneless skinless chicken breasts
2 onion, thinly sliced
3 coloured bell peppers , thinly sliced
2 tablespoons olive oil
1 tablespoon chili powder
1/2 tablespoon ground cumin
2 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon oregano
1/2 teaspoon salt
I’m a large bowl add sliced chicken, seasoning and oil. Marinate a minimum of 30 minutes is preferred. Marinate overnight in the refrigerator, covered, for more developed flavor.
Heat a large cast iron pan to medium heat and add olive oil.
Add the chicken with the marinade and cook until the chicken is cooked through.
Add the peppers and onions. Cook for 5-6 minutes, stirring here and there, until the peppers and onions are softened.
Serve on warmed tortillas and top with your favorite toppings. Enjoy.
