This beautiful Beet Salad with feta cheese
takes only 10 minutes to throw together, it’s healthy, delicious and easy to make.
1 1/2 lbs red beets cooked, peeled and diced.
1 garlic clove, finely minced.
4 tablespoons olive oil
4 tablespoons lemon juice
1/2 teaspoon salt, more to taste
1/2 teaspoon pepper
1/2 cup Italian parsley chopped
1 cup feta, cut into cubes
Boil or steam beets until fork tender (See notes-you can do this ahead and refrigerate Trim and rub under cool running water to remove skin.
Dice into small, 1/2 inch cubes. Place in a large bowl.
Add diced garlic, olive oil , lemon juice, salt and pepper and mix to combine well.
Gently toss feta cheese on to the beets.
Serve in a bowl and garnish with Italian parsley.
