Kabsa is a rice-based dish, The dish is made from flavourful seasoned basmati rice, juicy meat.

When it comes to making dinner, I like to keep it simple with just one pot. It minimize on the clean-up afterwards.

Ingredients

  • 2 lbs beef cubes cut in pieces

  • 2 Cups basmati rice

  • 4 Cups beef broth

  • 2 onions , thinly sliced

  • 5 cloves garlic

  • 1 bundle cilantro ( chopped)

  • 1 bundle paresly (chopped)

  • 4 small tomatoes ( thinly chopped)

  • 2 green hot chili peppers (optional)

  • 1 tablespoon black pepper

  • 1 tablespoon cumin

  • 3 pods green cardamom

  • 1/2 tablespoon turmeric

  • 1 tablespoon garam masala

  • 1 bayleaf

  • 1 cinnamon stick

  • 1 dried lime ( poked through)

  • Salt

  • 4 tablespoons slivered almonds (for garnish)


Instructions


  • In a large pot on low to medium heat, add the cut pieces of meat season with bay leaves, cinnamon sticks and dried lime. Pour in 4 cups of water and bring to a simmer. Reduce the heat to low, cover the pot and simmer gently for 1 hour until the meat is tender.

  • Meanwhile, fry all the slivered almonds in a pan until lightly golden brown. Set aside.

  • In a large bowl, add the rice. Rinse with water 2 to 3 times or until the water is clear.

  • In a skillet on medium to high heat, add 2 tablespoons of olive oil, and add sliced onions and garlic. Fry for 2 minutes while stirring.

  • Add the salt, black pepper, cumin, cardamom, gram masala, and turmeric. Continue toasting for one minutes while stirring.

  • Add the bay leaf, cinnamon stick, and dried lime. Stir for 30 seconds.

  • Add the chopped tomatoes, parsley and cilantro, stir for another one min.

  • Add the meat pieces and washed rice, then add the beef stock stir only once. Reduce the heat to very low.

  • Cover the pot and simmer very gently for 15 minutes until all the liquid has been absorbed. Top it with toasted nuts and serve immediately
