Ackawi Cheese Triangles buttery phyllo pastry is filled with a savory cheese filling and folded into delicious triangles.
INGREDIENTS
FOR THE FILLING:
* 1 1/2 cup crumbled Ackawi cheese
* 1 1/2 mozzarella cheese
* 2 eggs
* 1/4 parsley (chopped)
* 1/4 green onions (chopped)
* 1/4 teaspoon pepper
* 1/4 teaspoon salt

FOR THE TRIANGLE PIES:
* 18-21sheets of phyllo dough, thawed
* 1/2 Cup butter, melted
* 1 table spoon Sesame seeds (for garnish)
INSTRUCTIONS
1. Preheat oven to 350°F.
2. Start by desalting the Ackawi cheese. Cut Ackawi cheese into small pieces and soak in water for good 6 hours, changing the water every hour to reduce its saltiness.
3. Place all the filling ingredients in a large bowl and mix until well combined. Set aside.
4. Place one sheet of phyllo dough on the counter and brush it with the melted butter. Place another layer of phyllo dough on top and brush it with the melted butter. Total of 3 sheets.
5. Cut the stack of phyllo sheets in 3 long strips.
6. Place 1 tablespoon of the filling at the end of each strip of layered phyllo dough.
7. Starting at the end with the filling, fold the corner over to make a triangle, keep folding the triangle over onto itself until you get to the end of the strip.
8. Continue with the rest of the phyllo and filling to make approximately 15 pieces
9. Place the triangles on a baking sheet, brush with butter and sprinkle with sesame seeds and bake for 15 to 18 minutes until golden and flaky.
They can easily be made weeks in advance and frozen before baking.
